Chicken Salad

Hey Guys!! Hope everyone is doing well.....I want to say thank you for coming by and leaving all the wonderful comments...I love hearing from your guys and keeping up with what is happening on your side of the mountain...and all you RMS buddies...please know I do so appreciate you taking the time to come all the way over here and leaving me a comment....You guys will always be in my heart along with all the great memories I have of you from RMS!

I want to share with you my chicken salad recipe....this is my favorite all time chicken salad recipe...I have tried others and I just finally tweaked and played around until I found the right combination for me....this makes a huge batch and is a big hit at any gathering or baby shower...gosh just any occassion...It is like chips...once you take a bite you can't quit....I HAVE NO SHAME IN TELLING YOU I CAN EAT TWO CROISSANTS AT ONE SETTING!!! LOL

THIS IS SIMPLE..REMEMBER I DON'T HAVE ALL DAY TO STAND OVER A STOVE AND MY FAMILY DROPS IN UNANNOUNCED AT EVEN GIVEN TIME! LOL

HERE IS WHAT YOU WILL NEED...

I chop all my onions & celery & nuts up really...really small...I cannot stand a big chunk of raw onion or celery in my mouth! HERE IS WHAT MY STUFF LOOKS LIKE ONCE IT IS CHOPPED UP.. YOU WILL LOVE THESE GRILLED CHICKEN STRIPS...THEY SMELL & TASTE FANTASTIC! ONCE I GET EVERYTHING ALL TOGETHER WITH ALITTLE SALT AND BLACK PEPPER I PUT A BIG HEAPING TABLESPOON FULL IN THESE GREAT TASTING LITTLE CROISSANTS FROM WAL-MART... I MAKE UP TWO PKGS (16 CROISSANTS) AND KEEP THEM IN THE FRIDGE IN THE SAME CONTAINERS ..THAT WAY THE KIDS AND GRANDKIDS CAN JUST GRAB ONE WHEN THEY COME OVER...AND I STILL HAVE A BIG BOWL OF IT LEFT TO JUST EAT WITH CRACKERS OR BY ITSELF..YEA ...IT MAKES THAT MUCH...AND JUST LOOK AT HOW MOUTH WATERING THEY LOOK....WAIT TILL YOU TASTE THESE..YOU WILL SWALLOW YOUR TONGUE!!!!! If you like chicken salad..please give this a try and let me know what you think...here is the recipe!

DOT'S CHICKEN SALAD

3 Bags of Tyson Grilled Chicken Strips

1/2 cup chopped onion

1/2 cup chopped celery

1 cup chopped pecans

1/2 cup chopped green or red seedless grapes

3/4 cup dill pickle relish (I use Vlasic)

4 hard boiled eggs chopped

6 heaping tablespoons of the Hormel bacon bits in a bag

1 1/2 cups mayonnaise (I used Bama)

salt & pepper to taste (just alittle salt)


I chopped the bags of grilled chicken into small chunks...
I chopped the onion and celery into TINY little specks! lol
I chopped the pecans into little pieces...
I also chop the grapes into small pieces...

Add all the ingredients together in large bowl with the mayonnaise...it makes a big bowl...cover with clear wrap and keep in fridge...It is fantastic on a croissant or even just plain white bread!...Let me know if you make it and how it turns out for you...if it gets famous...remember..I get all royalties!!!! lol

Dot, that just sounds and LOOKS Awesome... wish I could just walk in an snag a few of those... LOL ... as it would have it, this morning we are making chicken salad. I have had it your way, minus the grapes, but I do like that idea and will suggest it! Thanks so much for sharing...

Oh, I love grapes in my chicken salad. Look, I have a hard time chopping all that stuff as I have spinal stenosis and can't stand, so why don't you just mail me that platter? You have it all ready made!

Oh my! That is my favorite recipe for chicken salad! Makes me want some right now! I haven't made it in ages, and I agree about chopping everything tiny! My Mama always put chopped celery in her's too, but I can take it or leave it. I actually prefer not to have the celery in this particular recipe.

My deception goes even deeper, I don't own any decorating chickens or roosters! LOL!~! That's not to say I don't like them in other people's homes, I just don't use them to decorate. Funny thing is mom had a big old rooster that sat on our kitchen table for years and years! I don't know what happened to him after she passed on. I'm just not an animal person. I do pick the chicken out of things and give it to my husband to eat! I like things made with cream of chicken soup, just no chicken for me. I don't eat a lot of meat period. When we absolutely were flat broke we cut out a lot of meat in our diet and I just never put it back in! My kids think all casseroles are meatless!! LOL!! Sorry to break your heart my chicken/rooster-loving friend but this is the true me! Love me or leave me, LOL!!

Oh my gosh, this looks so good! I love chicken salad, and would love to have it on croissants, but I can't have those any more. Waahh! It would be really good as a wrap sandwich though! Can't wait to try this!

Hmmm.. I have to say it looks interesting, but I don't think I'd be putting grapes in mine. That just doesn't seem right. Grapes don't go with chicken and mayo! Pecans are a little odd too, but I bet they give a nice little crunch. And the relish? Oh, no way!

I will have to try your chicken salad recipe for sure. I have such great memories of my mom and dad making chicken salad when I was a kid. They always pressured the chicken and then run it througjh an old meat grinder. My dad always let me put in all the pickles and eggs and such. We always made chicken salad in antisipation of my moms sister coming for a visit. She would always request my mom make it. She thought no one could make it better than my mom. I have a very funny memory of chicken salad gone "rancid" if you want to call it that. My mom made up a batch for our family trip to Walt Disney World and packed us up some sandwitches in the cooler to enjoy later. Lets just say those sandwitches had a little haunting after effect to them and we rode most of the way of the 15 hour trip to Florida with the windows rolled down. It got to be so funny we would laugh so hard we wopuld almost run off the road. Come to think of it I don't think that I have had chichen salad since.

This recipe goes right by the Chicken n Dumplin's, Vegetable Soup, and.....oh, heck I just need me a "PICKET'S COOKBOOK". I am going to try this. I have never made it with the grilled chicken strips but it sounds good and easy! You also have my favorite...BAMA mayonnaise!

I had to laugh when I read your recipe...it is almost identical to mine. I have one granddaughter that loves it on those sweet Dinner Rolls and when I go to the school to eat with her, I fix it and take 5 of them to her for lunch....lol

Hi Dot! thanks for your comments about my baby Alex. Now you know I'm going to try this recipe after the chicken and dumpling recipe. I had already told my husband I was going to make the dumplings for the ladies in my savings club, but now I'll have to see which one I will make I'll let you know, and take pictures. Oh yum! That looks so good! And I am hungry!

To make that banner, I just went thru some of my photos and after processing them, I cropped it into the strip like I thought I wanted it to look, then saved it. Then I went to my blog, click customize, click that top part below the nava bar, added the photo from my computer making sure I 'click to fit' and the photo was loaded.

Then on the tabs in the upper left hand corner, I changed some of the fonts and colors. There you have it.

I'm off today and going to the store for your chicken salad fixins! Last night was a big pot of potato soup so theres gonna be leftovers tonight. Tomorrows October, can't believe it! I hope we all can do some Christmas shopping this year with all this terrible economic mess going on! Maybe get back to handmade gifts of long ago. Hello Dot, I have been waiting for this recipe. It is just in time for my family this weekend. Remember the wedding shower for my great niece?
Well, the wedding is this Saturday at the Biltmore Estates. It is really a huge family reunion. All of my children and grandchildren will be there. My leg is doing great and I am going to dance. smile ( slow dance)
Anyway, We will have 17 for the weekend and chicken salad is on the menu. My RV will even be full. I am moving in to my bedroom this week because the guest room will be full too. Thank heaven for the cabin. Oh, what fun we will have.
