Comfort Food!!!

Morning everybody....we got a new week started! Hope everyone had a safe and beautiful weekend. It finally rained alittle here last night and it is actually sprinkling alittle this morning,,,now I don't know about y'all but after the past couple of weeks I have had I was in bad need of some comfort food....and I didn't feel like taking all day to fix it either! lol Now I love chicken & dumplings so years ago I made up a recipe that could get me some on the table in no time flat! You won't believe how easy and how good this recipe is....nooooo it can't compare to mama's homemade version but it is a great fill in....now here is all you need and it all goes in one pot!

this is just 2 cans chicken broth

1 can each of cream of chicken..cream of mushroom...cream of celery


16 oz bag of mixed frozen vegetables (one with the carrots, corn,beans,green peas )

frozen boneless chicken tenders ( use about 15 in mine)

1 bag Davinci bowtie pasta (this is the only brand that I have found to make the dumpling taste like real little dumplings..I know it seems strange but trust me they work!

1 Tablespoon (from your silverware drawer) of salt...some pepper & I use alittle dry parsley and dried onion flakes & I put about a stick of country crock margarine in mine.

Now add just enough water to cover it good...it will look like this above when you get started...bring it to a boil and lower the heat to a slow bubble and put a lid on it kinda cocked off to the side...stir often and cook for 30-35 minutes...turn off the eye and put the lid on right and just let it set for a few minutes. It will get so thick and so creamy and I promise you the bowtie noodles will really taste like little dumplings because they absorb those ''cream of'' soups and the next day it is even better and the chicken is so tender and moist...oh my word...make a pone of cornbread and you are good to go!
Now I grab a bowl the minute I turn the stove eye off....see it is still creamy.....but after a few minutes I put it in a casserole dish and look down there how it has thickened up...this really works people...but like I said I have tried other brand names of bowtie pasta and they all end up tasting like NOODLES!!!! But this Davinci brand actually takes on the taste of a little dumpling and there you have semi homemade chicken & dumplings on the table in 30-35 minutes!!!!
Oh did I forget to mention I also made a chocolate fudge cake...I told you I was in need of some comfort food! lol lol Hope you try this and like it...I have been tagged by Bo over at Brown Eyes to tell you 7 things about me (don't you already know 8 things about me already! lol) I will do that later on this week...I just want to enjoy a quite day with Bill today...Hope you all have a great day and treat yourself to alittle comfort food...it does wonders sometimes...love you guys!

Dot, that recipe is looking so delicious. I am going to make it tomorrow. I need to copy your recipe. Ever since I had my knee surgery I have been at the mercy of my poor dh who cooks NOTHING. If you can imagine eating frozen dinners for three weeks. Do I have to say more? Talk about comfort food. I have lost 5 lbs. (that was a good thing) smile.

Hey Dot, I am not sure you are getting my 'mail'! :) So I am hunting you down here! :) This looks yummy!!! We have a pasta around here that mimics that dumpling taste too! It is from an Italian store...I will have to remember it next time I shop there! I went to the store last night to get everything to take to Fran's to cook. I was afraid I wouldn't find the noodles since I had never used them but they were at our Kroger store. I'm going to Fran's some time soon and we are going to fix this one together.

I have probably told you this before but...I was telling twin the other day that if I could meet on person from blogland to spend the day with it would be YOU!!! I just think we would meet and it would feel like we have know each other FOREVER :o) Maybe someday.....

Good 'ole comfort food, and boy does that look delish!!!!! I'll be trying it this week. Not sure if I can find that pasta, but I'll try. I make my chicken 'n dumplings with cut up flour tortillas. Have you ever tried that. If I can't find the pasta, I'll cut up the tortillas. Hope you had a great day with your hubby.

They said they came here all the way from MI. to feed me. LOL They know my dh can't cook. I showed her your recipe and she is going to make it for me. I am in hog heaven.

Just an update, I saw my Dr. today and he said I get an A+ and a gold star. All is well so far. Thanks for all you concern for me with this knee replacement. I appreciate it so much.

WEll that looks really yummy! But everything looks and sounds yummy to me, we have been without power for 55 hours, how did those Ingalls on the Prairie do it?? I have never been so happy to have electricity in my life!!! Who would have thought we would have a hurricane in Bright, Indiana??? Our little town looked like a war zone, and we lost 5 huge trees, not to mention our food in the fridge and freezer. It has been an experience one I dont care if I never have again. I feel so sorry for those poor people who have to deal with this for weeks and even months, God Bless you, I dont know how you manage! Sorry about that, I just had to get it off my chest, aaawww I feel so much better, lol! Sue, mammawags62

Hey Dot1 Now I will have to try your easy dumpling recipe! I never knew it cold be easy! LOL! In fact, I rarely make them because it just takes too long! They are reserved for holidays and special occassions! Now I can make them anytime! So thank you so much!
I too have been craving comfort foods. I made a big pot of chili and jalapeno cornbread the other day. It was so good, even though it is still hot outside!

Just wanted to drop by and tell you I had the opportunity to try your "comfort food" chicken and dumpling recipe. Can you say "a little heaven on earth?" It was soooo good. Thanks for sharing.

Due to working full time, and taking on an extra 24 hours in a part time job, plus household and outside chores, I am always on the look out for a quick, but good and down home dinner plan. This recipe made so much, I called the kids and grandkids home for supper tonight to share this goodness.

hi hon! how'd you know I needed comfort food? the crap storm continues....a week saturday finished the week that I had to wait to have 5 stitches removed from my oldest daughter's foot...then I got sprayed by a skunk....and now today my truck died when I was on my way home...had it towed to the dealership....not to mention the other ongoing drama....

Hi Dot! I am so sorry to read about your cousin! It IS so hard to deal with the death of someone so close to you, whom you love so dearly. It does take time (as you know) and your faith in God to get through it.

On to happier thoughts---your dumpling recipe looks so delish and easy!! Doubly good. AND WOW does your fireplace surround look fabulous. I have an old mantel and surround I am going to put in my entry (I have to get someone to work on it a bit)---and I am also going to paint it black. Now that I see how great yours turned out---I am realllly excited to get 'er done!

Well, Dot...Chicken and Dumplin's are the headliners of my COMFORT FOOD LIST. Of course, I want them just like my mama used to make...and if I have plenty of time, I do her recipe. But...if not, I have used little canned biscuits, rolled really thin and they taste pretty good. Now, tho, I will sure try this recipe. Not sure we have that brand of pasta, tho...at least I've not seen it before. But, I'll go look at the store! Thanks for the recipe...and hope your day is good.
Oh, and that photo of LAST fall, with the candle and cake...I must have deleted it cause I can't find it anywhere. Oh, well...time to move on, I guess.

Hi Dot... MMMMMMmmmmm... your comfort food looks yummies! I'll print it off for my Husband to make. The guys will love it! I am allergic to Gluten (wheat, oats, barley, rye) so he always makes a small pot of "special" noodles for me and then adds a lil butter and veggies. Have you ever tried "Annie's Dumplings"? They are the flat ones... where we live they're called "slick dumplin's"... anyway, they can be found in the freezer section, and my Husband says they taste homemade and are a real time-saver for him!

Yummy! I took it to our Historical Society potluck, it was a hit! Even my son who doesn't like vegetables ate it, of course he picked some of the vegetables out but hey that is my son for you!
