Chicken Stuffing Casserole

Morning everybody..ok we are just one week away from The official start of the holidays! Being the 'Martha" that I am (yeah, right! lol) it is my solemn duty to cover all the bases for my fellow bloggers...when it comes to staying ahead of things...I mean somebody has to be the 'muleskinner' it might as well be me! Ok by now you should have your house looking halfway decent...have at least some idea of what will be on the table Thanksgiving day....may even have started the Christmas decorating already...

oh which reminds me...after Thanksgiving we gotta get our blogging neighborhood all decorated for Christmas...which means I gotta try to remember how to change my background without losing all my info and then go all over the web and find pretty little ornaments to decorate the sidebar...or just go around to some of your guys and steal some of your ideas and copy!

Anyway... I said all that to say all this...I shared with you our regular dressing but I realize some people aren't dressing type..you like stuffing...well I don't do stuffing so to speak..but I do make a chicken stuffing casserole that will cover all the bases for those of you who like to get your meat & vegetable quota all in one dish! lolRemember the chicken & dumplings recipe....ok no bowtie noodles in this one..but the basic is the same...2 chicken broths..cream of chicken...cream of mushroom & cream of celery

about 10 frozen boneless chicken tenders & 1 lb bag of frozen mixed veggies ..plus this time we are adding this....

Yep...we are about to make a fantastic casserole with our basics and Pepperidge Farm cornbread stuffing...2 eggs..1/2 cup melted butter...some sauted celery & onion AND ABSOLUTELY NO SAGE OR POULTRY SEASONING...you heard me..for all you dressing lovers that have sworn off dressing and stuffing loading with seasonings saying it causes too much...how shall I put this.....BODY NOISES!!!! LOL Well this is the recipe for you...pull a chair up and tuck that napkin in your shirt collar and dig in...cause if you don't like this one I'm all out of ideas for you! lol lolSeriously..next to the chicken & dumplings...this is our favorite and it is so easy you won't believe it....in one large pot..put all the Campbells products...the bag of vegetables...about 10 chicken tenders..alittle pepper and maybe a spoon of salt and some dried parsley...let this cook on medium high for about 20-25 minutes....while it is cooking just saute your celery & onion and add it to the pot...the chicken will be so tender it will fall apart with a fork. I always scoop the chicken out and cut it into big bite size pieces and then add it back.Slightly beat the 2 eggs and mix them in with the stuffing then add the melted butter and toss it all around until coated like above...now you are ready to assemble...I use a deep dish casserole pan...sprayed with Pam....
now you will layer this casserole....put 1/3 of the stuffing on the bottom layer....put half the chicken mix on next....add another 1/3 of the stuffing mix...then add the rest of the chicken mix and top with the last 1/3 stuffing....cover and bake in a preheated 350 degree oven until bubbling...about 30 minutes.
I always put mine on a cookie sheet cause it will get alittle happy and bubble over sometimes or just use a bigger casserole dish....this just happens to be my favorite for this dish. By keeping it covered it stays moist and the top stuffing doesn't burn and dry out.There you have it...just look at all that heavenly chicken and stuffing surrounded by that creamy bed of sauce and vegetables..oh my word people....there is no excuse now for anybody not having a great crowd pleasing dish to have for Thanksgiving or any meal for that matter...You got your meat...your bread..your vegetables..even the dairy products covered all in this one dish..you won't regret making this easy quick recipe!


Chicken Stuffing Casserole

2 cans Campbells chicken broth

1 can each of Campbells cream of chicken...cream of mushroom & cream of celery

10 frozen boneless chicken tenders

1 lb bag of frozen mixed vegetables

2 eggs slightly beaten

1/2 cup melted butter

1 large bag Pepperidge Farms cornbread stuffing

1 chopped onion

1 cup chopped celery (saute the onion & celery in butter)

a little dried parsley...black pepper..1/2-1 tablespoon salt


In a large pot put the Campbells products..the vegetables...the chicken..the sauted onion & celery..alittle dried parsley..pepper & about 1/2-1 Tablespoon salt... cook on medium high heat until chicken is done.about 20 -25 minutes...scoop chicken out and cut into big bite size pieces and add back to pot


put stuffing in a large mixing bowl..add the slightly beaten eggs and mix well...add melted butter and mix well


spray a large deep casserole dish with Pam..add 1/3 of the stuffing...add 1/2 of the chicken mixture..add 1/3 of the stuffing again...add the rest of the chicken mix....add the rest of the stuffing mix....cover and bake in a preheated 350 degree oven for about 30 minutes until bubbly.

Morning Dot, I think I have a simular recipe and your right , it is so good . I can't stand hard thick dressing that you can cut with a knife, yuck !! My poor sister in law cooks the awfullest dressing you have ever ate. I bet she puts a box of sage in it and I am not kidding, that dressing is green. Even the poor old dogs won't eat it !!!

Now you stole a recipe from me!! The only difference is we used left over turkey in our recipe!! Funny, I had never thought of using chicken in it even though there's cream of chicken soup! I do love your recipes. Good thing I don't live close or I'd be popping in for dinner a few times a week!!

This looks wonderful and like the best comfort food. Your recipes look like you keep the Campbells Soup company in business. They are a life saver in my kitchen. I now have almost 40 lbs of chicken (serving around 150 people)cooked slowly in my crockpot and again frozen for the 2nd wedding shower in next week. I can't wait to taste one of your delicious chicken salad sandwiches for myself:)

You make me smile! LOL I didn't use the Tyson strips in the bags because I am feeding 150 people! Half of them are burly boys like yours! I have a ton of other food to buy also:) So I bought the chicken breast on a bulk sale and cooking some each day and freezing it. In fact I have a boneless turkey roast in my large crock pot cooking right now to dice up and freeze... On the bright side, I will have a ton of wonderful drippings if our Turkey is a little skimpy of the fabulous juices on Thursday for yummy gravy:)
Tonight I am making the eclairs and cream puffs for the first shower on Saturday.
I am really feeling kind of nuts-so! ( Oh well I have a bag of chocolate close by:)
Are you sure you don't want to just make your wonderful sandwiches and send them to us and have Nikki's cute 'Government Nugget' deliver them to us? LOL
